Eatin' Like a Bird...

 Thai Curry Carrot Cole-Slaw


Who says you need a travel agent to travel to Thailand?
This spicy slaw will have you enjoying the Pan-Asian climate all year round!
Ingredients
·         1 – 2 lb. bag of carrots (about 15) – julienned
·         ½ c. raisins – add more if you Love these little guys!
·         1 red pepper, seeded and diced
·         1 bunch of green onions, tops only, chopped
Dressing
·         1 cup of non-fat Greek yogurt
·         2 ½ tsp. curry powder
·         4 tsp. white vinegar
·         4 tsp. honey
·         1-8 oz can of crushed pineapple, drained
Procedure
·         Using a food processor, julienne all the carrots, and place in a very large mixing bowl.
·         Add to the carrots the chopped red pepper, green onions as well as the raisins.
·         In a separate small bowl, mix all the dressing ingredients.
·         Pour dressing over the carrot mixture and gently toss the vegetable.
·         Serve fresh or chilled
Sweetened Coconut could also be added to make it sweeter if you would like…and cashews!
